Why do I gain weight when I go on a reduced calorie diet?

When I eat normally I usually consume around 1500 to 1800 calories a day and pretty much eat whatever I want reasonably (and maintain my current weight). But lately I've been wanting to loose a few pounds so I'll eat anywhere from 800 to 1200 calories a day. However when I restrict like that I gain weight! Like I'll eat good all week (drop a few pounds) then I'll eat normally and gain it all back (and sometimes even a little more!). I'm on my feet all day and if it helps I'm 5'8 and 145 pounds.
