You have a pretty good plan in place. With doing cardio you do take the risk of losing some of your muscle you are gaining the other days. You might have to push yourself a little more on the muscle days to offset the cardio but it is very reasonable to gain muscle and lose belly fat at the same time. - Yeah skipping meals is not a good think. Also it IS possible to gain muscle and lose fat at the same time but it is "difficult" according to a trainer at my gym. He said it's better to gain muscle first and then lose fat.
